How do I export 30 days of met data?

I am trying to get a data set of archived HRRR data over California from 2021-05-10 to 2021-06-13.

When I try to extract the data, I don't have any options to change the dates in the drop-down. I can only get the data for a few hours of May 10th.
Can anyone tell me how to create this data set?
