Hello, I am trying to work with ERA5's meteorological data. Is there any way to change the projection from lat-lon grid to polar coordinates without losing spatial resolution when converting ERA5 archive to ARL format?

I try to change the projection conversion method from None (Input Lat-lon Grid) to S-Hemisphere Polar Stereo but it goes from a grid of 1440x361 to 100x100.

Could you please give more information about what you are doing.
Please include how you are downloading the ERA5 data and what conversion programs you are using.
